Hand made lemon meringue fudge

Hand made lemon meringue fudge
Last year I made Eton mess fudge which went down a treat. So I thought it was high time I made some more! This time I went for a soft creamy lemon meringue fudge...

Lemon meringue fudge (makes 24 pieces)

Ingredients
  • 2 tbsp lemon curd
  • 75g (3oz) unsalted butter
  • 700g granulated sugar
  • 200ml (7 fl oz) double cream
  • 200ml condensed milk
  • 50g meringue, crumbled

Cooking instructions
  1. Line a 20cm (8") square pan with baking parchment
  2. Place the butter, sugar, cream and condensed milk in a heavy based jug
  3. Stir using a wooden spoon over low heat until sugar has dissolved
  4. Now turn up heat to medium and bring mixture to a boil, stirring occasionally so mixture does not stick to bottom of pan
  5. Place candy thermometer in jug and leave until mixture heats to "soft ball", 240 deg F
  6. Remove from heat
  7. Using an electric whisk or food mixer, beat mixture for about ten minutes
  8. Add lemon curd and broken meringue and beat mixture for about ten minutes until it loses its gloss
  9. Pour mixture into prepared pan
  10. Leave to set for a few hours
  11. Cut into small squares
  12. Store in airtight container in fridge

Tips...
You must use a candy thermometer as making fudge is an exact science
You can use a heavy based saucepan if you do not have a jug
Remember the mixture gets very hot, so please take care

Kitchen bird hooks update

Kitchen Wall
When I saw the "Sugared Almonds" apron and oven gloves for just £3.87 each in Tesco, I couldn't refuse them at that price! I adore the mix of the pink polka dot print and the pretty cake stands stacked with pastel macaroons, adorable pink kettles, candy filled jars, and cute patterned cups. They are a perfect addition to my kitchen bird hooks.

Another addition to my bird house kitchen hooks is the pretty pink heart colander from Miniamo which my niece Molly gave to me for my birthday back in January.

Garden tools, a makeover

I have had my garden trug and tools for a few years but the tools were starting to look worn and the paint on the trug had started to chip away. So with my new fondness for spray paint I decided to give them a makeover. I used Malachite Light by Montana Gold.

My potting bench

My potting bench
Last week I shared with you some of my garden details and last month I showed you how I made my herb etagere that sits just outside my patio doors. Today I wanted to share with you my new potting bench that sits further along my patio...

I bought it in the sale from Greenfingers.com and gave it several coats of Cuprinol Garden Shades in pale jasmine paint. I then added some cup hooks to the side for extra storage space. I now have the perfect place to do all my potting and re-potting of plants and it brightens up my once dull green fence.

Making Magazine - Indian Summer

Last month I had my first feature in the gorgeous Making Magazine - Beach Beautiful with a Q&A and two crafts I had made for the issue. This month the theme was "Indian Summer" and my ombre cakestand was on the front cover! I also made some floral paper pom poms in bright shades of yellow, red and orange...

My ombre cake stand was filled with brightly coloured macarons, infused with fragrant spices and inspired by the exotic flavours of India, by Bethan Davies.

Bombay Duck, a review & giveaway

The lovely peeps at Bombay Duck asked me if I would like to do another review so, after spending ages deciding what to review as they have so many lovely products, I finally chose the cute heart shaped umbrella stand in cream. To put inside it, I also chose the fantastically cheerful jewel pom pom large umbrella in fuchsia and the gorgeous frill-finished large glitter spots umbrella in turquoise.

I adore the sturdy umbrella stand which I think looks super stylish in the corner of my hallway and the "Raindrops are falling on my head" words in pink at the bottom make me smile...

My hallway room update

A little while ago I shared with you how we had transformed our hallway room. Well, now the finishing touches have been added and it is finally pretty organized!

I have re-purposed my Winter Wonderland advent house into a great little storage place for all our nik naks, like postage stamps and loose change. I hung an enamel postage box on the wall and have a cute new storage place for my lovely umbrellas from Bombay Duck. More on that tomorrow, with a fab giveaway to boot! Now I just need to sort out the cupboard behind the floral print curtain!
